Just west of Progreso, on the other side of a gap in the coastal sand bar, these easygoing villages have long, almost empty beaches. They’re popular for windsurfing.

A dish that dates back to pre-Conquest Mayan cooking – pork marinated in lime, bitter orange, and achiote (a hot, spicy mix of dried herbs), wrapped in banana leaves and baked in an earthenware dish. Punchy but flavorful, it’s very versatile and can be served as a main course or just used to make tacos. Pollo pibil is a chicken version of this dish.

Tasting rather like spinach, Chaya is a vegetable native to the Yucatán. And, like spinach, it is exceptionally rich in iron and vitamins. It features in traditional cooking and new dishes like this one, in which it is cooked with garlic and wrapped in light, soft European-style wheat pancakes (crêpes) and served with a cheese sauce. Chaya is also used to make drinks (see Agua de Chaya).

Naturally crocodiles are the big attraction here, but you can also meet monkeys, parrots, and deer, as well as stranger elements of the local wildlife.

Dos Ojos is very possibly the world’s longest underwater cave system. The snorkeling or diving tours offered by the Hidden Worlds center are a memorable experience.

A Mayan city in many ways as spectacular as Chichén Itzá. The “Building of the Five Stories” is one of the largest Mayan palaces.

Alongside the north coast road is a long, narrow sand-spit island, El Bajo, with deserted, coconut-palm shaded beaches. In the tiny village of Santa Clara you can find boatmen offering occasional trips to the island.

At the end of a lonely road through savanna grass, forest, and sand flats, this tiny fishing village is a place to escape the crowds and sample miles of Gulf coast beaches.
