Les Santons, Moustiers-Ste-Marie

The terrace overlooks the stream rushing through the village; in the dining room, antique Moustiers crockery competes for space with 19th-century paintings. Outside or in, the food refines the best of Provençale cooking. Dishes include fresh pasta with foie gras and truffles or lamb from Sisteron with herbs (see Les Santons, Moustiers-Ste-Marie).
Les Templiers, Vence

Another gourmet choice, with some truly excellent dishes such as tagliatelle with cepes and truffles.
Les Trois Forts

Great views over the port to accompany fine regional cuisine.
Lou Marques, Arles

Dishes such as gigot of lamb and risotto of coquilles St-Jacques (scallops) served in the restaurant of this four-star hotel. There is also a terrace.
Louis XV, Monte Carlo

The world’s most glamorous diners expect splendour, and get it amid wood-panelling, gilt mirrors and glistening chandeliers. Splendour on the plates, too, where France’s leading chef, Alain Ducasse, works Provençale cuisine into a sensual art form. If you have to think about the expense, you’re in the wrong place.
L’Amphytrion, Aix-en-Provence

Noted equally for its wine list as its menu, which features favourites such as Sisteron lamb in a tapenade crust. Pretty terrace too.
L’Arbousier, St-Raphaël

In the heart of town, serving particularly inventive dishes, such as courgettes with fresh goat’s cheese.
L’Epuisette

Set amid Marseille’s traditional seaside cabins, L’Epuisette has its feet in the water but its mind firmly on fresh fish.
L’Escale

Out in the calanque of Les Goudes, and with a sea-view from paradise, this restaurant serves up some of the region’s best fish.
L’Olivier, Arles

Dishes unique to the region, such as Camarguais bull steaks, served in a pretty courtyard.
