1. Haggis
Scotland’s most famous dish is like a large, round sausage containing spiced sheep’s innards and seasoning. It’s usually eaten with mashed “tatties” (potatoes) and “neeps” (turnips).

The meat of wild red deer, dark and full-flavoured. It’s served as a steak or cut into collops (slices of roast meat).

One of Scotland’s prized game birds, this dark meat is roasted and served with home-made bread sauce.

A mix of potatoes, onions and beef cooked in the dripping (fat) from the Sunday roast.

5. Kippers
Fresh herring split open, salted and smoked. A common breakfast dish.

6. Arbroath Smokies
Similar to kippers, but these are smoked haddock rather than herring.

7. Smoked Salmon
Thin boneless slices of salmon that have been smoked to give a rich taste and deep pink colour.

8. Scotch Broth
A light soup made from mutton or beef stock, pearl barley and various vegetables such as carrots and leeks.

9. Cock-a-leekie Soup
Chicken, leeks, rice and prunes cooked in chicken stock – as wonderful as its name.

Like chowder, this is a delicious soup made from smoked haddock, milk and mashed potato.
